Vegan Chocolate Lava Cake

I've never had a lava cake before so I wanted to make one for this challenge. This lava cake is so easy to make and so flavourful. I honestly couldn't believe how quick it came together and how soft it was. Plus you don't even have to remove the lava cake from the ramekins!

INGREDIENTS
5 tbsp all purpose flour or gluten-free all purpose flour
6 tbsp cocoa powder
3 tbsp white sugar
1 tsp baking powder
a bit of salt
150 ml plant-based milk

Preheat oven to 200°C / 390°F. Place your 2 ramekins on a baking pan.

Add flour, cocoa powder, sugar, baking powder and a pinch of salt to a medium bowl. Mix together.

Add in your plant-based milk of choice. Stir the mixture so everything is well combined. The batter will look kind of runny but that's completely fine. 

Divide the lava cake batter evenly between the two ramekins.

Put the lava cakes into the oven and bake for 13-14 minutes or until the cakes have puffed up and look set but if you move the ramekins, they cakes still wobble in the middle. You really need to keep an eye on the cakes at this step because depending on your oven, you can really easily over cook them. The cakes will continue cooking for a bit once removed from the oven so you really don't want the cakes to over cook. 

Sprinkle a bit of salt over the cakes and serve immediately with some ice cream or berries of your choice. 

NOTES
Once the cakes are in the really oven, it's really important to keep an eye on them or they will overcook and you lose the gooey center. 
To make it extra chocolate-y, you can add some chocolate to your ramekins before you pour over the batter.
This goes well with vanilla ice cream, but you can also add berries or you can just dust the cakes with some powdered sugar or cocoa powder.
This can also be made gluten free! Just use a gluten free flour instead of regular flour.
