Easy Apple Rolls

 

These rolls are so easy to make and so tasty! Ideal to make if you have lots of apples on hand and don't want to spend a lot of time in the kitchen. The cardamom also adds a nice autumny flavour to the rolls. If you have kids, this is also a very kid-friendly recipe as they can help you with the covering of the dough and also with the rolling. 

INGREDIENTS
500 g / 1.1 puff pastry
2 big green apples
1 tbsp melted butter
2 tbsp brown sugar
1 tsp cinnamon
1/4 tsp ground cardamom
1 egg, beaten
flour
oil

Preheat the oven to 180°C / 356°F.

Put a tiny amount of oil into your muffin pan so the rolls won't stick to it.

Wash the apple and cut into thin slices. You can save the apple cores to make apple cider vinegar.

Dust the work surface with a bit of flour and then roll out the dough into a rectangle that is approx. 30 x 24 cm / 12 x 9 inches in size. 

Melt 1 tablespoon of butter and spread that over the dough. Mix together the brown sugar, cinnamon and cardamom. Cover the dough with the mixture.

Cut the dough into 12 pieces. 

Whisk one egg. 

Put around 5 apple slices on one dough strip or more if needed. Leave an edge free of apples so you can cover that bit with the whisked up egg. The egg acts as glue that will hold the roll together. 

After you've covered the edge with egg, roll up the dough into a small roll. 

Put your apple rolls into the muffin pan and bake the rolls until they are golden brown and crispy. That will take around 15 minutes.

NOTES
After the rolls are done, you can dust them with a bit of powdered sugar. 
You can always use red apples if that's what you have on hand but I've found the green apples balance out the sweetness.
If you don't have a muffin pan, you can bake these on a regular oven tray that is covered with a baking sheet. The muffin pan helps the rolls to keep their shape.
